more cooking!

Hello,
I have a few more recipes to share with you! This week we tried a new recipe - another Skinny Taste winner!!! Slow-cooker chicken black bean tacos the slow-cooker part is misleading because it only cooks two hours but this is a fantastic recipe - loved the cabbage!!
Another recipe that I love is green chili - there are lots of different ways to make green chili - everybody does it different. I can't remember where I got this one. It has potatoes in it but I still serve it with La Flavorita tortilla chips - 60 calories per ounce and they don't taste like diet chips! Also reduced fat cheese and low fat sour cream.

Green Chili

1 T vegetable oil
1 chopped onion
3 garlic cloves minced
1 1/2 pork trimmed and cubed
1 t and 1 t red chili powder
1 t white vinegar
1 T cumin
1 t oregano
1 t salt
ground pepper to taste
2 c chicken broth
1 1/4 Yukon potatoes scrubbed and cubed
1 15 oz can diced tomato
8-16 oz green chilies

 Heat oil in pan, add onion and garlic. Cook 5 minutes stirring frequently add pork and spices. Cook until browned. Add remaining ingredients and cook until potatoes are tender.
I don't have calories on this one and I have it listed as 4 regular points for a cup I sure hope that's right - or I've been having more points than I should. I make this about every other week!!

  2. He is right (and fresh himself) but canned work if you don't have fresh roasted chilies! Still the best husband I ever had.
